How is your summer going? I hope you are enjoying the magic and playfulness of the season while staying cool, hydrated, and well nourished.




My days have been feeling full with expansive summery activities such as weekend trips to the mountains, early morning walks, and a few fun evening hikes and al fresco dinners with friends.


Summer is a longed-for season, and one that I often remind myself to savor.


While that is all good, we may find ourselves getting home at the end of the day little later, and a bit more tuckered out (eating later anyone?).


Thank goodness the seasonal foods of summer are more light, fresh, and weeknight dinners can be quick to prepare.

WALNUT CRUSTED WILD-SALMON OVER SUMMER GREENS

I've been knee deep in research lately preparing for the upcoming docu-series I will be filming next week. In my geeking out about the latest research on what we need to be hormonally healthy (hint: a lot of good fats!) I created this recipe for you.

Full of both plant-based ALA from walnuts and wild-salmon based EPA and DHA, which both support healthy levels of omega-3 leading to healthy and happy hormones, be sure to check out this delicious (and easy) recipe.

Walnuts are one of the highest sources of omega-3 oils (in the form of alpha-linolenic acid) of all the nuts. Walnuts (like many other fat-rich nuts) are a great source of healthy protein and fat, giving you a satiating and blood-sugar stabilizing snack.

Wild salmon is full of omega-3 fatty acids and collagen, making wild salmon a potent food rich in health-promoting natural fats that work wonders in many systems of your body.


Both of these superfoods will stabilize your blood sugar, provide you with a dense amount of omega-3 fats promoting hormone and brain health and satiate your hunger and fullness hormones to boot!

Here in Colorado we love our Palisade peaches. To me there is nothin' better than a late summer peach. This recipe is a fun spin on a Caprese salad and a delightful addition to your harvesty table.

This low glycemic fruit is a great late summer fruit to boost up your antioxidant intake without throwing your blood sugar off track.  If you can find local organic peaches in your area, you will notice the flavors are even more full and tasty. 

If you are not a dairy eater, feel free to substitute the fresh mozzarella in this recipe with a nut cheese (such as ricotta) and enjoy!!

AVOCADO CHICKEN SALAD

Try this light and zesty favorite.  So much flavor, lightly creamy, a little lemon for a bright zing.  Oh so satisfying.

When you prepare this, be sure to prepare some extras, as this is such an easy grab-and-go favorite.  Put a dollop on your salad greens, enjoy with some raw veggies, or simply eat it as is!

B.L.A.T. LETTUCE WRAPS

I grew up eating BLTs with my dad. It was one food that we both loved, especially when we had fresh garden tomatoes to use.

Lately, I have been playing with this lettuce wrap version (and adding 🥑 avocado). Butter lettuce is my favorite lettuce for a lettuce wrap, and pair it with avocado mayo and it's a little slice of heaven.

Try this yummy lunch when you can!

Oh those summer garden zucchinis can be just so yummy in so many different ways...but wait until you try these!!  Savory, scrumptious and so full of goodness. A little extra collagen peptides added in to these delicious cakes and your skin, nails and digestion will thank you.

Zucchini is a nutrient dense, hydrating and versatile veggie that is chock full of potassium, vitamin C,  manganese and many other phytonutrients and antioxidant. Zucchini is also low glycemic and highly anti-inflammatory.  Add a little collagen powder (available at your local health food store) and you are gearing up for a great dish!
